Kubo Honke is a superb brewery that makes sakes that are a touch more challenging for the beginner, but incredibly rewarding for those who know what theyโ€™re looking for. As a nigori, this sake is only roughly filtered and so has some rice particles still suspended inside of it, giving it an unusual milky texture. It is also very dry, which is very unusual for a nigori. Being made with the traditional kimoto method of sake brewing, it has high levels of umami, meaning that it should definitely be warmed up to appreciate it even more.

A super smooth but viscous nigori. Creamy nose of yogurt and fresh cheese. Off dry but with a rice pudding-like texture and gentle sweetness on the palate balanced by a tangy acidity and a delicate, creamy mousse. Finish is medium with hints of toasted cereal.

Sake With Character

Kubo Honkeโ€™s stylistic sake lays its foundation on the traditional Kimoto brewing method, which emphasizes umami and lightness at the same time as providing complex aromas. It has a refreshing acidity and a solid core of flavor that goes along with almost any type of food. Kubo Honke's sakes are, however, not necessarily very approachable, and this cloudy sake is no exception. Note that drinking this Nigori chilled doesn't unlock all of it's flavors and will make it taste somewhat unbalanced, so make sure to heat it up first.
