Kubo Honke is a superb brewery that makes sakes that are a touch more challenging for the beginner, but incredibly rewarding for those who know what theyโ€™re looking for. This non-charcoal filtered sake is unusual because itโ€™s aged for a year even though it is unpasteurized (usually unpasteurized sake are to be drunk very young). This gives it an unusual combination of fresh and vibrant notes while also delivering on the complexity and intensity that aging bestows.

From the first sip, the umami dial is turned up to max. The top nose displays the freshness intrinsic of this unpasteurized style with notes of chestnut, lemongrass, basil and rosemary, but contrary, the palate surprises with a multi-dimensional, crunchy spread of flavor: butter, mature cheese, raisins and toasted cereal with hints of fruits like baked apple and pear. This sake is constantly eschewing the line between youth and maturity and somehow manages to strike a balance between both. A grainy texture adds an extra dimension to the experience. The finish is medium.

Sake With Character

Kubo Honkeโ€™s stylistic sake lays its foundation on the traditional Kimoto brewing method, which emphasizes umami and lightness at the same time as providing complex aromas. It has a refreshing acidity and a solid core of flavor that goes along with almost any type of food. This unpasteurized sake is aged for one year, which makes it very, very unique in the world of sake (usually only pasteurized sakes are aged). But that also means that it is still very appraochable. So if you are looking for something just slightly unique but with more character then this is a great choice.
