Kubo Honke is a superb brewery that makes sakes that are a touch more challenging for the beginner, but incredibly rewarding for those who know what they’re looking for. This junmai ginjo is just slightly aged and is a great stepping stone into the world of aged sake. The lovely complexity and smoothness of aged sake are present while the more extreme flavors are very muted. If you’re curious to try something new and think aged sake might be it, this is the one to try.

Just on the cusp of maturity, on the top nose, the sake still retains purity and youthful swagger with notes of melon, pear, apricot, lily and a hint of fresh almond. This transitions effortlessly into a maturer bouquet of steamed rice, honey and cloves. Mellow with a bright acidity. A velvety texture adds contours as the sake slides across the tongue into a long, luxurious, appetizing melody of savory flavor that leave you thirsting for more.
